BREAKFAST LOVE: CACAO & COCONUT GRANOLA RECIPE

Love the taste of nutella but not a fan of processed ingredients? Love granola but grain-free?

Here is my favourite grain-free, gluten-free, refined sugar-free, dairy-free (basically everything free) granola. It’s also low in carbs and sugars.

Ingredients:

  • 100 grams almonds
  • 100 grams hazelnuts
  • 100 grams cashews
  • 100 grams brazil nuts
  • 50 grams pumpkin seeds
  • 50 grams sunflower seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons honey
  • 2 tablespoons coconut oil
  • 1 tablespoon non-hydrolyzed gelatin (read more about gelatin in last week’s recipe post)
  • 1 egg white 
  • 2 tablespoons cacao powder
  • 100 grams coconut chips or flakes

Method:

Preheat oven to 170 celsius. Chop nuts coarsely, one type at a time.

Melt coconut oil and honey in a saucepan (be careful not to burn it).

Whisk in gelatin. Add in chia and then remove from heat. Stir in egg white.

Add nuts to the saucepan mixture and combine to coat. Add in cacao and stir. Fold in coconut chips.

Spread evenly on a baking tray and bake for 7-9 minutes.

Serve with natural yoghurt or milk of your choice.
